The winners were just unveiled on November 10 and this is the TWENTY FIRST consecutive Hale ‘Aina win for the restaurant! Mahi Mahithe time to plan your holiday dinners and parties! Lahaina Grill has been busy preparing for the holidays, we are ready for you — whether it’s in celebration of a job well done, or a gathering of friends and family. We have prepared several menus for your group — small or large. Host a party to be remembered with price per person starting at $69 (not including beverages, tax, gratuity.) Lahaina Grill offers two rooms well suited for groups, the semi-private Chef’s Dining Room (accommodates 30), and our Chef’s Table (accommodates 6-9) in addition to the full restaurant setting which is available for dine-arounds, or full or partial buy-outs (accommodates up to 120). Here is a sample menu to help get you started, additional menus and options available upon request.

FUTURE EXECUTIVE CHEF SCHOLARSHIP

Congratulations KimberlyWe are pleased to introduce our 2013 Lahaina Grill “Future Executive Chef” Scholarship winner from Maui Culinary Academy. Kimberly Lovely was this year’s recipient and we were so pleased to meet her and host her for dinner and a tour of the kitchen with Chef Arnie.

Several years ago Jurg created an annual scholarship to assist a Maui Culinary Academy student with their tuition. He set the scholarship up where each of the academy instructors would vote for the student for that year who portrayed great skills, work ethic, creativity and a pure love of food and who they felt would someday become an “executive chef”.

Here are some of the quotes shared with us by instructors at Maui Culinary Academy about Kimberly:

– Kim is open to suggestions and advice. She is always looking for a better way to do things.
– Kim makes a silent commitment to improve each day and is viewed by the MCA faculty as a student who is always willing to help out….go the extra mile.
– Kim inspires other students to achieve their goals by supporting their efforts and acknowledging their successes.
– Kim is highly dependable, a team player in the kitchen, willing to work hard and very aware of the importance of a solid academic foundation in both the culinary arts and business acumen skills to become a successful chef.

Oma’s Gingerbread Holiday Cookies

Makes about 24 Cookies

INGREDIENTS:
Lahaina Grill Recipes7 1/2 oz. Unsalted Butter
1 cup Granulated Sugar
9 oz. Corn Syrup
1/4 cup Milk
1lb. 5 oz. Bread Flour or All Purpose Flour
1/2 Tbsp. Baking Soda
2 Tbsp. Cinnamon
1 Tbsp. Chinese 5 Spice Ground or Ground cloves
1 Tbsp. Ground Ginger

METHOD:
Add butter, sugar, corn syrup and milk in a sauce pan. Heat to about 110˚F. Stir to a smooth paste.
Sift flour, baking soda, and spices, incorporate into butter mixture.
Line bottom of a sheet pan with parchment paper, flatten the dough, refrigerate overnight.
Cut out cookies using your favorite shape cookie cutter (or a 3 inch round).
Bake at 400 degrees F for about 10 minutes.

Lahaina Grill Recipes
SPICED PEAR TREE
1 1/2 oz spiced rum (captain morgan, sailor jerry or a rhum agricole)
1/2 oz spiced simple syrup**
1/2 oz fresh lemon juice
1 oz fresh pear puree

Method: Shake all ingredients in shaker, strain into martini glass. Garnish with star anise and lemon twist.

**to make spiced simple syrup
2 C sugar
1 1/2 C water
2 Tbsp allspice berries
2 Tbsp cloves
2 cinnamon sticks
3 whole nutmegs
1 Tbsp whole black peppercorns
1 tsp vanilla extract
Combine all ingredients except vanilla in a saucepan and bring to boil. Turn off heat and let sit till cool. Strain into container and stir in vanilla. Refrigerate.
